Green Bean And Beansprout Salad Recipe

Ingredients
  • 8 oz fine green beans, topped & tailed .
  • 1 tbsp rice wine vinegar or white wine vinegar .
  • 3 spring onions, finely shredded .
  • 3 sprigs fresh basil leaves .
  • 1 red onion, very finely sliced .
  • 1-2 tsp sesame oil .
  • 7 oz canned straw mushrooms .
  • 1 tbsp sesame seeds, toasted .
  • For the garnish .
  • 3 sprigs fresh coriander .
  • 1 tbsp fresh coriander leaves, roughly sliced .
  • 2 tbsps shoyu or light soy sauce .
  • 4 oz mange-touts peas, shredded diagonally .
  • 1 tbsp Thai basil, roughly sliced .
  • 6 oz bean sprouts .
  • 1 tsp raw brown sugar

Directions
  • Step #1 Steam the green beans & mange tout for 3 mins.
  • Step #2 Place in a colander & refresh under cold running water.
  • Step #3 Drain.
  • Step #4 Place the beans, mange tout, bean sprouts, onion & mushroom In a large-ish bowl & mix well.
  • Step #5 In a small bowl mix together the vinegar, sesame oil, shoyu, & sugar.
  • Step #6 Stir in the coriander & basil leaves, pour over the salad ingredients & toss together well.
  • Step #7 Transfer to a serving platter & scatter over the spring onions, herb leaves & toasted sesame seeds.
