Rhubarb Cake Recipe

Ingredients
  • 300F g flour .
  • 60 g butter .
  • 1 tsp vanilla .
  • 1 lemon rind, grated .
  • 2 eggs .
  • 500 g rhubarb, uncooked & cut into cubes .
  • sultanas .
  • 1 tsp cinnamon .
  • 250 ml sour cream .
  • 380 g brown sugar .
  • 1 tsp baking soda

Directions
  • Step #1 cream butter & sugar(it does not get to the consistency of white sugar & butter).
  • Step #2 add eggs & vanilla.
  • Step #3 sift in a tbsp of flour first & fold it in(a trick my mummy allways taught me).
  • Step #4 sift in the rest of the flour, baking soda anc cinnamon; fold it together.
  • Step #5 add rhubarb, lemon rind & sour cream - mix well.
  • Step #6 pour this into a 22cm cake tin.
  • Step #7 bake this at 180 degrees C for 1 hr or until toothpick inserted in centre comes out clean.
  • Step #8 Topping(optional):80g brown sugar with cinnamon.
