Creamy Chicken Rice Soup Recipe

Ingredients
  • 2 tbsps lemon juice
  • 1/3 c sliced celery
  • 1/2 tsp salt
  • 1 tbsp white wine
  • 1/4 tsp pepper
  • 2 (14.5 oz) cans reduced sodium chicken broth
  • 2 c cooked long-grain rice
  • 1/4 c all-purpose flour
  • 1/3 c finely sliced onion
  • 1 c cubed cooked chicken
  • 1 c 2% milk
  • 2 tbsps butter or stick margarine
  • 1/2 c sliced carrot
  • 1/8 tsp garlic powder

Directions
  • Step #1 In a large saucepan, saute the carrot, onion & celery in butter until tender.
  • Step #2 Stir in flour until mixed.
  • Step #3 Gradually stir in the broth.
  • Step #4 Add the rice, chicken, salt, pepper & garlic powder; bring to a boil.
  • Step #5 Reduce heat; cover & let simmer for 10-15 mins or until vegetables are tender.
  • Step #6 Reduce heat to low.
  • Step #7 Stir in the milk, lemon juice & wine if desired.
  • Step #8 Cook & stir for 5 mins or until heated through.
