Vegetarian Irish Stew Recipe

Ingredients
  • 1/4 tsp rosemary .
  • 1 bay leaf .
  • 2 tsps marmite .
  • 1/2 c fresh parsley .
  • 1 c celery, sliced .
  • 2 c mushrooms, thickly sliced .
  • pepper .
  • 1/2 c split red lentils .
  • 2 medium onions .
  • 1 c textured vegetable protein, chunks .
  • 1/4 c Braggs liquid aminos or soy sauce .
  • 1/4 c unbleached flour .
  • 1/4 tsp marjoram .
  • 1 tsp sugar .
  • 3 vegetable bouillon cubes .
  • 1 c turnips or rutabagas .
  • 1 c carrots or parsnips, sliced .
  • 1/4 tsp thyme .
  • 4 c water .
  • 1 c dark beer, see note

Directions
  • Step #1 In a large, lightly oiled pot steam fry the onion until it begins to soften [that means cook it in a bit of water] Add flour & stir around completely.
  • Step #2 Add the remaining ingredients, mix well, bring to boil.
  • Step #3 Cover up & let simmer on low for 30 mins or until vegetables are done.
  • Step #4 Taste & season.
  • Step #5 Note: The turnips should be large dice.
  • Step #6 The carrots round sliced.
  • Step #7 You may use other yeast extract than marmite.
  • Step #8 Bryanna uses Guiness Stout but dark non alcoholic beers work also.
  • Step #9 Also look in speciality or finer food stores for the Marmite.
  • Step #10 It is a British product.
  • Step #11 I find mine in Wegmans in PA/NY.
