Step #1 To make the soup, you simply place all the ingredients, except the crème fraiche or cream, In a large-ish saucepan.
Step #2 Spice up lightly with salt & pepper, bring up to simmering point, then put a lid on & let simmer very carefully for 45 mins.
Step #3 While that is happening, you can prepare the croutons.
Step #4 Heat the oil In a large-ish frying pan & cook the bacon carefully for 5 mins, together with the thyme, & the bacon, add the cubes of bread, & toss them around (keeping them constantly on the move) until they, then turn the heat up to its highest setting, have turned a deep golden brown colour & become very crisp & crunchy.
Step #5 Take them out & leave them to cool on some absorbent kitchen paper.
Step #6 As soon as the soup is ready, add the crème fraiche or cream & mix well - allow it to cool slightly, & then transfer it to a mixer & purée until smooth.
Step #7 (You may need to do this in more than one batch, in which case, it is a good idea to have a bowl to put the soup in as it is ready.

Step #9 Re-heat the soup in the pan, with the croutons, season to taste & serve in warmed soup bowls, bacon & thyme sprinkled over.
