Vietnamese Spring Rolls Without The Meat Recipe

Ingredients
  • 2 tbsps vegetable oil, divided .
  • 1 tsp dark sesame oil .
  • 1 1/2 c fresh bean sprouts .
  • 12 oriental dried mushrooms .
  • 2 tsps sugar, divided .
  • 1 garlic clove, minced .
  • 1 medium yellow onion, sliced .
  • 3 c vegetable oil, divided .
  • 14 egg roll wraps .
  • 1 large carrot, cut into julienne strips .
  • 1 tbsp soy sauce .
  • 1 egg, beaten

Directions
  • Step #1 Drain & rinse your bean sprouts.
  • Step #2 The wrappers should be 7 inches.
  • Step #3 Rehydrate the oriental mushrooms in hot water for 30 mins.
  • Step #4 Toss the carrot with 1 tsp sugar until mixed then let sit tossing every once in awhile for 15 mins.
  • Step #5 Drain the mushrooms save 1/2 c of the liquid.
  • Step #6 Squeeze excess water out of the mushrooms then cut off stems & cut caps into thin slices.
  • Step #7 Heat the wok over med high.
  • Step #8 When hot dizzle 2 tbsp oil into it & heat for 30 seconds.
  • Step #9 Add the onion & stirfry for a min.
  • Step #10 Then add the mushrooms, garlic & liquid reducing heat to medium.
  • Step #11 Cover up & cook about 3 mins.
  • Step #12 Mushrooms should be tender.
  • Step #13 Uncover add the soy sauce & sesame oil & sugar.
  • Step #14 Cook & stir mushroom mixture 3 to 5 mins more or until all liquid has evaporated.
  • Step #15 Transfer mushroom mixture to medium bowl; set aside to cool slightly.
  • Step #16 cook stirring for about 4 mins.
  • Step #17 Liquid should be gone.
  • Step #18 Then set aside in bowl to cool.
  • Step #19 Add the carrot strips & bean sprouts to mix & toss lightly.
  • Step #20 Place a wrapper on sruface & keep rest covered.
  • Step #21 Drain mushroom mix & place 3 tbsp on wrapper's bottom 3rd.
  • Step #22 Brush edges with beaten egg.
  • Step #23 Now: Fold bottom corner up over filling.
  • Step #24 Fold in & overlap the opposite right & left corners to form 3-1/2-inch-wide log.
  • Step #25 Roll up filling to remaining corner & place spring roll on tray covered with plastic wrap.
  • Step #26 Repeat with remaining wrappers & filling.
  • Step #27 Now take the remaing 3 c of oil, place this in wok & heat.
  • Step #28 You want 375F on a deep fry thermometer.
  • Step #29 Fry 4 rolls 2 to 3 mins or until golden brown.
  • Step #30 Reheat oil & do next batch.
  • Step #31 Repeat until all are used.
  • Step #32 Drain on paper towels.
  • Step #33 Place on serving tray with dipping sauce.
  • Step #34 Serve.
