Jamaican Jerk Chicken And Seasoning Recipe

Ingredients
  • 1 1/2 tsps ground cinnamon .
  • 3/4 tsp paprika .
  • 1 lime, juice of .
  • 1 1/2 tsps black pepper .
  • 3/4 tsp ground nutmeg .
  • 3 lbs chickens (pieces, wings, halves, whatever) .
  • 1/4 c olive oil .
  • 12 bay leaves (finely crumbled) .
  • 2 tsps ground scotch bonnet peppers (habanero) .
  • 1 tbsp ground allspice .
  • 3/4 tsp garlic powder .
  • 1/3 c sugar .
  • 1 tbsp ground ginger .
  • 2 tbsps ground thyme .
  • 1 tbsp ground rosemary .
  • 1 1/2 tbsps sea salt .
  • 1 1/2 tsps onion powder

Directions
  • Step #1 Combine all but chicken, lime juice & oil in mixing bowl & whisk to mix well.
  • Step #2 Whisk together lime juice & olive oil.
  • Step #3 Rub chicken well with lime/oil mix.
  • Step #4 Do not marinate.
  • Step #5 Coat chicken with dry seasoning/spice mixture.
  • Step #6 The idea here is to get as much as possible to stick to the chicken.
  • Step #7 We store our seasoning in a leftover spice container with large sprinkle holes & use that to season.
  • Step #8 This is not a rub, so it should not be applied in rub fashion.
  • Step #9 Refrigerate 1-3 hrs, then remove this from refrigerator & allow to come to near room temperature.
  • Step #10 Prepare grill for direct/indirect grilling.
  • Step #11 Grill chicken over hot direct fire.
  • Step #12 Don't worry about the black, it's supposed to be there.
  • Step #13 In fact, 30-40% of the skin should end up black, but it will not be bitter.
  • Step #14 Once seared, remove to the indirect heat area of the grill & cook to 165* internal temperature.
  • Step #15 One quick dance across the direct heat before serving will help crisp it a bit.
  • Step #16 Serve with plenty of napkins.
