Turkey And Vegetable Loaf Recipe

Ingredients
  • 1 garlic clove, crushed .
  • 2 lbs lean ground turkey .
  • 1 tbsp fresh tarragon, minced .
  • 1 tbsp fresh parsley, minced .
  • 1 egg white, beaten lightly .
  • 1 medium zucchini, thinly sliced .
  • salt .
  • black pepper .
  • 2 medium tomatoes, thinly sliced .
  • 1 tbsp fresh chives, minced .
  • 1 onion, finely sliced

Directions
  • Step #1 Preheat oven to 375ºF & line a non-stick loaf pan with parchment paper.
  • Step #2 Place the onion, garlic, turkey & herbs in a bowl.
  • Step #3 Mix together with your hands then add the egg white to bind.
  • Step #4 Press 1/2 of mixture into preapred pan.
  • Step #5 Arrange sliced zucchini & tomatoes over meat.
  • Step #6 Top with the rest of the turkey & press down firmly.
  • Step #7 Cover up with kitchen foil wrap & place this in a roasting pan.
  • Step #8 Pour in enough hot water to come halfway up the sides of the loaf pan.
  • Step #9 Bake for 1-1 1/4 hrs, removing foil wrap during the last 20 mins.
  • Step #10 Test by inserting a skewer in the center of loaf; juices should run clear.
  • Step #11 The loaf will also shrink away from the sides when done.
  • Step #12 Remove from pan & transfer to a warm platter.
  • Step #13 Serve with warmed tomato sauce if desired.
