1 c mayonnaise (plain yogurt, or prepared ranch-style dressing) .
1 lime, juice of .
salt .
1/2 small red cabbage, halved, cored, & thinly sliced .
extra virgin olive oil .
1/3 lb sharp cheddar cheese, cut into 1/4-inch dice .
1 red bell pepper, cored, seeded, & thinly sliced
Directions
Step #1 In a bowl, cilantro, red bell peppers, hot sauce, salt, lime juice, mix the mayonnaise, & pepper; add in the sliced cabbage, parsley, & half the scallions; stir this to coat & set aside.
Step #2 In another bowl, reserved scallions, salt, mix the ground chicken, cheddar dice, barbecue sauce, & pepper; mix well.
Step #3 Divide mixture into 4 equal portions; form each portion into a 1-inch thick patty.
Step #4 Preheat a nonstick skillet over medium-high heat; drizzle olive oil over the patties & place them in the hot skillet.
Step #5 Cook 5-6 mins per side, or until firm & cooked through.
Step #6 While the burgers are cooking, toast the kaiser rolls; transfer burgers to the bottoms of the toasted rolls; pile some spicy coleslaw on top, then replace roll tops.
