Asparagus-goat Cheese Pasta Recipe

Ingredients
  • 14 1/2 oz chicken broth .
  • 2 tbsps all-purpose flour .
  • 1/2 lb whole wheat pasta or spinach linguine .
  • 1 tsp grated lemon peel .
  • 1 lb asparagus .
  • 4 oz goat cheese .
  • 1 tbsp butter .
  • 1/2 c grated parmesan cheese

Directions
  • Step #1 Heat a large pan of lightly salted water to boiling over high heat.
  • Step #2 Peel the asparagus stalks & trim the ends.
  • Step #3 Cut the stalks into 2-inch pieces.
  • Step #4 Blanch in boiling water 3 mins or until bright green & crisp-tender when tested with a small knife.
  • Step #5 With a slotted spoon, remove the asparagus & rinse under cold water to stop the cooking.
  • Step #6 Add the spaghetti to the boiling water & cook according to the label directions until al dente.
  • Step #7 Drain.
  • Step #8 Meanwhile, in a medium saucepan over medium-high heat, melt the butter.
  • Step #9 Blend in the flour with a whisk.
  • Step #10 add the broth & cook for 2 mins, stirring constantly, until the sauce thickens.
  • Step #11 Blend in the goat cheese & the lemon peel.
  • Step #12 Toss the spaghetti with the asparagus, sauce & half the Parmesan.
  • Step #13 Serve with the remaining Parmesan & freshly ground black pepper.
