Coconut Macadamia Bars Recipe

Ingredients
  • 1 c vanilla or white chips
  • 2/3 c sweetened condensed milk
  • 1 c graham cracker crumbs
  • 1/2 c sliced macadamia nuts
  • 1/3 c butter or margarine
  • 1 tsp sugar
  • 1 1/4 c flaked coconut, divided
  • 1 tsp shortening

Directions
  • Step #1 Place the butter in an 8-in.
  • Step #2 square microwave-safe dish.
  • Step #3 Cover & microwave on high until melted, about 1 min.
  • Step #4 Stir in cracker crumbs & sugar; press firmly onto the bottom of the dish.
  • Step #5 Microwave, uncovered, on high for 1-1/2 mins.
  • Step #6 Cool for 5 mins.
  • Step #7 In a bowl, mix 1 c coconut, milk & nuts; spoon over the crust.
  • Step #8 Microwave, uncovered, on high for 1 min.
  • Step #9 Rotate dish a half turn; cook 1 min longer or until heated through.
  • Step #10 In a small microwave-safe bowl, mix chips & shortening.
  • Step #11 Microwave, uncovered, at 70% power for 1 min; stir.
  • Step #12 Heat 40 seconds longer or until melted, stirring once.
  • Step #13 Quickly pour over coconut mixture; spread evenly.
  • Step #14 Toast remaining coconut if desired; sprinkle it over the top.
  • Step #15 Cool on a wire rack; cut into bars.
