Shrimp Antipasto Recipe

Ingredients
  • 1 (12 oz) jar marinated roasted red peppers, strips .
  • 1 1/2 lbs medium shrimp, cooked, peeled & deveined (thawed if frozen) .
  • 1 leaf lettuce .
  • 1 (3 oz) jar capers, drained .
  • 1 (12 oz) jar quartered marinated artichoke hearts .
  • 1 (12 oz) jar marinated mushrooms

Directions
  • Step #1 Place the shrimp in the bottom of a large bowl.
  • Step #2 Add the mushrooms, with their marinades, artichoke hearts & pepper strips, & the drained capers.
  • Step #3 Toss carefully; cover & put in the fridge for several hrs or overnight, stirring every once in awhile.
  • Step #4 Drain & serve on a platter lined with lettuce.
