Ingredients
2 c milk chocolate, grated .
CRUMBLE .
4 c frozen mixed berries .
4 tsps water .
2 c 35% cream .
RED BERRY JELLY .
4 tsps sugar .
2 tbsps sugar .
1 tsp pectin .
6 tbsps flour .
3 tbsps sugar .
4 tsps sugar .
1/3 c sugar .
1 c milk .
6 tbsps pine nuts .
CUSTARD .
3/4 c water .
4 egg yolks .
1/4 c cold butter, cut into small cubes
Directions
Step #1 RED BERRY JELLY: mix both amounts of sugar & pectin in a bowl.
Step #2 Heat the fruit & both amounts of water in a saucepan over med-heat/flame; when the fruit has thawed, add the sugar/pectin & mix well.
Step #3 Bring to a boil & simmer for 10 mins; remove this from heat & leave to cool.
Step #4 Pour into tall glasses & put in the fridge.
Step #5 CUSTARD: Bring milk & half the sugar to a boil in a saucepan.
Step #6 Whip the egg yolks with the rest of the sugar in a bowl.
Step #7 Whisk half the hot milk into the egg mixture; when fully incorporated, whisk in the rest.
Step #8 Return the mixture to the saucepan, stirring over med-heat/flame until it thickens slightly or a thermometer indicates 185F (85C).
Step #9 Remove from heat; if necessary, use a hand mixer to smooth the custard.
Step #10 Pour the hot custard into a bowl, add the chocolate, stirring to mix & cool to about room temp.
Step #11 In another bowl, whip the cream until soft peaks form; fold the chocolate mixture into the whipped cream, using a spatula.
Step #12 Spoon the custard into each glass over the berry layer & return to the fridge.
Step #13 CRUMBLE: Toast the pine nuts on a baking sheet in a 300F (150C) oven until golden, about 5 mins; let cool & coarsely chop.
Step #14 Combine pine nuts, flour & sugar in a bowl, using an electric mixer; add the butter & continue mixing until texture is crumbly.
Step #15 Refrigerate until chilled; spread the mixture on a baking sheet & bake this at 325F (160C) for 15 mins.
Step #16 Sprinkle top over the bavarian cream layer before serving.
