Step #2 In a mixing bowl, mix all of the dry ingredients & whisk to mix.
Step #3 Mix the shortening until the mixture resembles crumbs.
Step #4 Add the liquid & carefully mix until the dough forms a ball.
Step #5 Turn out onto a floured surface (sweet rice flour) & pat to
1" thickness.
Step #6 Cut the dough into 2 1/2 inch squares or use a biscuit cutter.
Step #7 Place lightly touching each biscuit on an ungreased baking pan (or pizza stone) Bake for about 20 mins.
Step #8 CHeck to make sure that the biscuit dough is done before removing from the oven.
Step #9 Makes about 8 large biscuits
* Here is the gluten free flour mix that I use
*Gluten Free Flour Mix
6 c Sweet Rice flour
2 c Potato starch
1 c Tapioca starch.
Step #10 **I have found if I sub 1 c of yogurt, it makes a very light biscuit.
