Mrsp's Hearty Gluten Free Biscuits Recipe

Ingredients
  • 1/4 c quinoa flour .
  • 1 tsp salt .
  • 1/4 c teff flour, use 1/4 c .
  • 2 tsps sugar .
  • 1 tsp baking soda .
  • 1 1/4 c gluten-free baking mix (*6/2/1) .
  • 2 tbsps flax seed meal .
  • 6 tbsps shortening .
  • 1 c buttermilk .
  • 3 tsps baking powder .
  • 1 tsp guar gum

Directions
  • Step #1 Preheat oven to 425F degrees.
  • Step #2 In a mixing bowl, mix all of the dry ingredients & whisk to mix.
  • Step #3 Mix the shortening until the mixture resembles crumbs.
  • Step #4 Add the liquid & carefully mix until the dough forms a ball.
  • Step #5 Turn out onto a floured surface (sweet rice flour) & pat to 1" thickness.
  • Step #6 Cut the dough into 2 1/2 inch squares or use a biscuit cutter.
  • Step #7 Place lightly touching each biscuit on an ungreased baking pan (or pizza stone) Bake for about 20 mins.
  • Step #8 CHeck to make sure that the biscuit dough is done before removing from the oven.
  • Step #9 Makes about 8 large biscuits * Here is the gluten free flour mix that I use *Gluten Free Flour Mix 6 c Sweet Rice flour 2 c Potato starch 1 c Tapioca starch.
  • Step #10 **I have found if I sub 1 c of yogurt, it makes a very light biscuit.
