Japanese Mushroom, Chestnut & Butternut Squash Pilaf Recipe

Ingredients
  • 100 g rice .
  • 150 g butternut squash, peeled & cut into chunks .
  • 1 tbsp soy sauce .
  • 400F ml boiling vegetable stock .
  • 6 shiitake mushrooms .
  • 1 tbsp toasted sesame seeds .
  • 2 tbsps mirin .
  • 100 g cooked chestnuts

Directions
  • Step #1 Put the rice, soy sauce & mirin in a small sauce pan with a lid, chestnuts, squash, lay the musrooms on the surface stalk side down.
  • Step #2 Pour the vegetable stock over the rice to cover it by about 1/4 inch, bring to a simmer, cover & cook for 15 mins or until the rice is tender.
  • Step #3 Sprinkle top with sesame seeds before serving.
