Penne With Asparagus, Smoked Salmon, And Dill Recipe

Ingredients
  • 2 tbsps snipped fresh dill .
  • 3 oz smoked salmon, 2-3 slices, cut into 1 1/2 x 1/4-inch strips .
  • 2 tbsps extra-virgin olive oil .
  • 2 tbsps unsalted butter .
  • 1/2 red onion, cut into thin lengthwise slices .
  • 1 bunch asparagus, cut diagonally into 1-1 1/2 inch pieces .
  • 16 oz penne .
  • fresh ground black pepper

Directions
  • Step #1 Heat the butter & oil in a big skillet; add in the onion; cook/stir over low heat/flame for 5 mins, until tender (do not brown).
  • Step #2 Add in asparagus; stir-fry until crisp-tender, about 5 mins; remove this from heat.
  • Step #3 Add the salmon to the skillet; stir this to mix; sprinkle w/ pepper to taste.
  • Step #4 Cook pasta in plenty of salted boiling water, stirring every once in awhile, until al dente; drain.
  • Step #5 Return pasta to pot; add the asparagus mixture & dill; toss to mix.
  • Step #6 Spoon into a large serving bowl & serve at once.
