Cream Of Morel Mushroom Soup Recipe

Ingredients
  • 2 tbsps olive oil .
  • 1 lb fresh morels, finely sliced .
  • 2 c heavy cream .
  • 1/4 c celery, sliced small .
  • 1 tsp black pepper .
  • 1/4 c butter, melted .
  • 1 1/2 c chicken stock .
  • 1/4 c onions, sliced small .
  • 1 tbsp kosher salt .
  • 1/4 c flour

Directions
  • Step #1 Cook onions & the celery in the olive oil.
  • Step #2 stir often till soft.
  • Step #3 Add Morel mushrooms & cook about 6 to 7 more mins.
  • Step #4 Add Butter & slowly stir in the the flour.
  • Step #5 Now add the chicken stock, salt & pepper.
  • Step #6 Bring to a low boil, reduce to a simmer & cook 10 to 15 more mins.
  • Step #7 Add Heavy cream & continue to cook another 10 mins.
