Mini Stuffed Baked Potato Appetizers Recipe

Ingredients
  • 1/2 tsp seasoning salt or white salt (or to taste) .
  • 1 small green onion, finely sliced .
  • 1/2 tsp garlic powder (or to taste) .
  • 15 small red potatoes (washed & leave unpeeled) .
  • 1/4 c olive oil (or use vegetable or Canola oil) .
  • finely sliced green onions (to garnish) .
  • black pepper .
  • 3-4 slices bacon (cooked & finely crumbled) .
  • 2 c sour cream

Directions
  • Step #1 Set oven to 400F degress.
  • Step #2 In a bowl mix together the oil with salt & garlic powder.
  • Step #3 Slice the potatoes in half then coat all sides with the oil mixture.
  • Step #4 Place on a greased baking sheet cut-side down.
  • Step #5 Bake for about 25 mins or until just tender; cool completely.
  • Step #6 In a medium bowl mix sour cream with green onions & crumbled cooked bacon, then season this with black pepper.
  • Step #7 Slice a small thin piece off of the bottom of the baked potato half so that it will sit upright, then turn potato over.
  • Step #8 Using a melon baller or small spoon scoop out some of the center pulp (reserve the pulp for later use).
  • Step #9 Fill with about 1 tbsp sour cream mixture, then sprinkle more sliced green onion on top of the sour cream.
  • Step #10 Serve as soon as possible or chill until needed.
