Key West Pork Chops Recipe

Ingredients
  • 3 c tomato juice or water .
  • 1 lime, cut into 6 slices .
  • salt .
  • 6 lean pork chops .
  • 6 tbsps chili sauce .
  • 1 large onion, cut into 6 slices .
  • 1 1/2 c rice, raw .
  • 1/2 tsp Tabasco sauce .
  • 3 tbsps salad oil

Directions
  • Step #1 Preheat the oven to 325F degrees F.
  • Step #2 In a Dutch oven, heat the oil, add the chops & brown on both sides.
  • Step #3 Remove the chosp & and drain off all but 4 tbsps of the fat.
  • Step #4 Stir in the raw dry rice, coating all the grains with the fat.
  • Step #5 Arrange the chops on top & sprinkle with salt.
  • Step #6 Place a slice of onion, a slice of lime, & a spoonful of chili sauce on each chop.
  • Step #7 Add the tomato juice & Tabasco, cover closely & bake this until the chops are tender, about an hr.
