Chicken Curry Recipe

Ingredients
  • 12 oz ghee .
  • 10 cardamom pods, split open .
  • 1/2 tsp ground black pepper .
  • 3 tsps ground cumin .
  • 6 garlic cloves, sliced .
  • 4 lbs skinless chicken, & jointed .
  • 1 c fresh ginger, sliced .
  • 1 pint water .
  • 2 tsps turmeric .
  • 5 cinnamon sticks, broken up .
  • 4 bay leaves .
  • 1/2 pint yogurt .
  • 1 1/2 lbs onions, sliced .
  • 2 tsps garam masala .
  • 3 tsps salt .
  • 10 cloves .
  • 1 tsp chili powder

Directions
  • Step #1 Melt the ghee In a large-ish pan & fry half of the onions till golden.
  • Step #2 Liquidise the rest of the onions with the ginger & the water.
  • Step #3 Add the liquid to the fried onions & cook for 10 mins on low heat.
  • Step #4 Add the salt & all of the spices & cook 10 mins.
  • Step #5 Add the yogurt & stir well, then add the chicken.
  • Step #6 Cover up the pan & cook till the meat falls from the bones.
  • Step #7 Serve with a vegetable curry & rice.
