Fresh Tomato Salsa Recipe

Ingredients
  • 1/2 c sliced fresh cilantro .
  • 2 tbsps fresh lime juice (from 1 lime) .
  • 1 garlic clove, minced .
  • 1 jalapeno or serrano chili, minced (ribs & seeds removed for less heat, if desired) .
  • tortilla chips, for serving (optional) .
  • 1 1/2 lbs plum tomatoes, cored, halved, & seeded (6-8) .
  • coarse salt .
  • 1/2 medium red onion, minced (1/2 c)

Directions
  • Step #1 Chop tomatoes into 1/4-inch pieces; transfer to a small bowl.
  • Step #2 Add onion, cilantro, chile, garlic, & lime juice.
  • Step #3 Spice up with salt.
  • Step #4 Mix well to mix.
  • Step #5 Let stand 15 mins to develop flavor.
  • Step #6 Salsa can be kept at about room temp up to 2 hrs.
  • Step #7 To store, transfer to an airtight container, & put in the fridge up to 3 days.
  • Step #8 Serve with tortilla chips, if desired.
