Step #1 Peel, seed, & chop 2 cucumbers.
Step #2 Cook the sliced scallions in the margarine until soft.
Step #3 Add the sliced cucumbers & the wine vinegar.
Step #4 Pour in the broth, & stir in the the farina.
Step #5 Salt to taste, & add tarragon.
Step #6 Let the soup simmer for 20 mins, or until the cucumbers are soft.
Step #7 Put the soup into a mixer, & puree it.
Step #8 Pour the puree into a bowl, & whisk in the sour cream.
Step #9 Taste the soup for seasoning.
Step #10 Pour the soup into bowls, & garnish with cucumber slices & sliced parsley.
