Cucumber Soup Recipe

Ingredients
  • 3 tbsps sliced fresh parsley
  • 1/8 tbsp dried tarragon
  • salt to taste
  • 2 cucumbers
  • 1/2 c sour cream
  • 4 c chicken broth
  • 2 tbsps margarine
  • 1 tbsp red wine vinegar
  • 1 tbsp farina
  • 2 tbsps thinly sliced green onion

Directions
  • Step #1 Peel, seed, & chop 2 cucumbers.
  • Step #2 Cook the sliced scallions in the margarine until soft.
  • Step #3 Add the sliced cucumbers & the wine vinegar.
  • Step #4 Pour in the broth, & stir in the the farina.
  • Step #5 Salt to taste, & add tarragon.
  • Step #6 Let the soup simmer for 20 mins, or until the cucumbers are soft.
  • Step #7 Put the soup into a mixer, & puree it.
  • Step #8 Pour the puree into a bowl, & whisk in the sour cream.
  • Step #9 Taste the soup for seasoning.
  • Step #10 Pour the soup into bowls, & garnish with cucumber slices & sliced parsley.
