Mexican Macaroni Salad Recipe

Ingredients
  • 1 pint grape tomatoes, cut in half .
  • 1 large avocado, pitted, peeled & sliced .
  • 1 (1 1/4 oz) package taco seasoning mix .
  • 2 medium green onions, sliced (including tops) .
  • 1 c ranch dressing .
  • 1 (19 oz) can red kidney beans, drained & rinsed .
  • 1-2 tbsp lime zest, grated (from 2 medium limes) .
  • 3-4 tbsps fresh lime juice (from 2 medium limes) .
  • 1 c cheddar cheese, grated .
  • 2 tbsps fresh cilantro, finely sliced .
  • 1 (6 oz) can pitted ripe olives, drained & cut in half .
  • 6 c rotini pasta, uncooked (1 lb) .
  • 1 (4 1/2 oz) can green chilies, drained & sliced

Directions
  • Step #1 cook & drain pasta as directed on package.
  • Step #2 Rinse with cold water to cool; drain well.
  • Step #3 Meanwhile, grate peel from limes; place this in a small bowl.
  • Step #4 Squeeze juice from limes; add to peel in bowl.
  • Step #5 Stir in dressing & taco seasoning mix.
  • Step #6 Stir in avocado into dressing mixture.
  • Step #7 In a large serving bowl, toss pasta with all remaining ingredients.
  • Step #8 Pour dressing mixture over salad; toss carefully to mix.
  • Step #9 Cover up & put in the fridge at least one hr before serving to mix flavors.
