Seven-layer Rigatoni Recipe

Ingredients
  • 1 (7 oz) jar roasted red peppers, drained & sliced .
  • 3 c uncooked rigatoni pasta .
  • 3 tbsps fresh basil leaves, sliced .
  • 3 garlic cloves, finely sliced .
  • 1 (28 oz) can crushed tomatoes, undrained .
  • 2 1/2 c reduced-fat mozzarella cheese .
  • 1 c parmesan cheese, shredded .
  • 8 oz fresh sliced mushrooms .
  • 1 lb Italian turkey sausage

Directions
  • Step #1 Cook & drain pasta as directed on package.
  • Step #2 While pasta is cooking, saute sausage in 10 inch skillet, stirring every once in awhile, until no longer pink; drain.
  • Step #3 In a separate bowl, mix tomatoes, garlic & basil.
  • Step #4 Heat oven to 375 degrees.
  • Step #5 Spray/grease rectangular baking dish (13x9x2 inches).
  • Step #6 Layer half each of the pasta, mushrooms, bell peppers, parmesan cheese, sausage, tomato mixture & mozzarella cheese in baking dish, then repeat the process.
  • Step #7 Bake uncovered 35-40 mins or until hot & cheese is golden brown.
