Kosher Sweet & Sour Braised Brisket Recipe

Ingredients
  • 20 large shallots .
  • 2 1/2 c chicken broth .
  • 6 dates, pitted (such as Medjool) .
  • 2 lbs sweet onions .
  • 1 c tomato puree .
  • 6 tbsps extra virgin olive oil .
  • 1 c orange juice .
  • 4 large garlic cloves, Peeled .
  • 1 tsp ground cloves

Directions
  • Step #1 Brown the brisket In a large-ish frying pan coated with 2 tbsps of the olive oil for 5-10 mins per side.
  • Step #2 Place the brisket fat side up into a deep roasting pan.
  • Step #3 Slice the onions thinly & sauté them in the same frying pan with 2 more tbsps of olive oil until golden brown.
  • Step #4 Cover up the brisket with the sautéed onions.
  • Step #5 Sauté the shallots in the remaining 2 tbsps of olive oil then set aside until later.
  • Step #6 Deglaze the frying pan with the chicken stock, then pour the stock over the brisket.
  • Step #7 Mix the dates, garlic, cloves, orange juice & tomato puree in a mixer or food processor/blender until liquefied.
  • Step #8 Pour this mixture over the brisket, cover tightly with aluminum foil wrap & bake in a preheated 325F degree oven for 2 1/2 hrs.
  • Step #9 Uncover, add the shallots, re-cover & bake an extra 1 1/2 hrs or until done, removing the cover for the last 20-30 mins.
  • Step #10 Remove the brisket from the pan, reserving the juices, onions & shallots in the pan.
  • Step #11 For a little added flavor, you can place just the brisket on a grill, with wood smoking chips, for 10-15 mins if desired.
  • Step #12 Let the brisket stand for 15-30 mins so that its juices can re-distribute.
  • Step #13 Slice thinly.
  • Step #14 Use the reserved braising liquid along with the shallots & onions for a serving sauce.
