Lemon Shrimp Oriental Stir-fry Recipe

Ingredients
  • 5-7 oz shrimp .
  • 1 tbsp low sodium soy sauce .
  • 1/3 c onions, sliced .
  • 1/4 red pepper, sliced .
  • 1 tbsp cornstarch .
  • 1 celery rib, cut on the bias .
  • 1 tsp Splenda sugar substitute .
  • 1 dash pepper .
  • 1/2 tsp lemon zest .
  • 1 1/2 tbsps lemon juice .
  • 1/2 c bok choy, sliced .
  • 1/2 c water .
  • 1/4 c bean sprouts

Directions
  • Step #1 Combine cornstarch, splenda, soy sauce, lemon zest, pepper, water, lemon juice in a bowl.
  • Step #2 Set aside.
  • Step #3 Coat skillet with non-fat cooking spray.
  • Step #4 Preheat over med heat.
  • Step #5 Add celery, bok choy & onion.
  • Step #6 Cook for 1 min.
  • Step #7 Add green pepper & bean sprouts & cook another min.
  • Step #8 Stir-fry all veggies until crisp tender.
  • Step #9 Remove from pan & set aside.
  • Step #10 Add shrimp to skillet & stir-fry until shrimp turns pink.
  • Step #11 Add veggies back into pan.
  • Step #12 Add the sauce & cook this until slightly thickened.
  • Step #13 If desired, serve over 1/3 c brown rice.
  • Step #14 This makes 1 serving.
  • Step #15 LAWL count: 1 protein, 2 veg, 1 fruit & with the rice 1 starch.
