Pineapple Date Bran Muffins Recipe

Ingredients
  • 1 c whole wheat flour .
  • 1/2 c canned crushed pineapple .
  • 1/2 tsp baking soda .
  • 1/4 c plain nonfat yogurt or applesauce (or, my preference, Apple Crumble Source yogurt!) .
  • 1/2 c Splenda sugar substitute .
  • 1/4 c dates, sliced or raisins .
  • 1/2 tsp salt .
  • 2 egg whites .
  • 1 1/2 tsps baking powder .
  • 2/3-1 c non-fat soy milk (use enough to form a moist batter) .
  • 1 1/2 c all-bran cereal .
  • 1/4 c sugar-free maple syrup

Directions
  • Step #1 Preheat oven to 400F & spray muffin tins.
  • Step #2 Mix yogurt, Splenda, syrup & egg whites until well mixd.
  • Step #3 Add pineapple, milk & cereal; stir & let sit at least 5 mins.
  • Step #4 Mix dry ingredients in aseparate bowl; add to wet.
  • Step #5 Stir in dates.
  • Step #6 Spoon batter into tins.
  • Step #7 Bake for 25-30 mins, or until toothpick comes out clean.
  • Step #8 Leave in tins at least 2 or 3 mins before removing.
