Coconut Pumpkin Nut Bread Recipe

Ingredients
  • 2 tsps baking soda
  • 1 c sliced walnuts, toasted
  • 1 tsp ground nutmeg
  • 2 c packed dark brown sugar
  • 2/3 c coconut milk
  • 1 tsp salt
  • 2/3 c white sugar
  • 3 1/2 c all-purpose flour
  • 2/3 c unsweetened flaked coconut
  • 1 c vegetable oil
  • 1 (15 oz) can pumpkin puree
  • 1 1/2 tsps ground cinnamon

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour two 8 x 4 inch loaf pans.
  • Step #3 Combine flour, salt, pumpkin, coconut milk, oil, baking soda, sugars, & spices.
  • Step #4 Mix until well mixed.
  • Step #5 Fold in coconut & nuts.
  • Step #6 Pour into prepared pans.
  • Step #7 Bake for about 1 hr & 15 mins, or until an inserted toothpick comes out clean.
  • Step #8 Remove from oven.
  • Step #9 Cover with foil tightly, & allow to steam 10 mins.
  • Step #10 Remove foil, & turn out onto cooling rack.
  • Step #11 Tent lightly with the foil, & allow this to cool completely.
