Lemony Summer Chicken Recipe

Ingredients
  • 3 tbsps lemon juice .
  • 1 1/4 lbs boneless skinless chicken breasts, cut into thin strips .
  • 1 tbsp sesame seeds .
  • 5 tbsps chicken bouillon .
  • 1/2 c cashews .
  • 1 tbsp soy sauce .
  • 1 c green beans, thinly sliced into 2-in pieces .
  • 1 egg white .
  • 1 inch piece gingerroot, shredded .
  • 4 tsps cornstarch .
  • 1 tbsp sugar .
  • 3 tbsps vegetable oil .
  • 4 scallions, cut into 2-in pieces & then into thin strips .
  • 2 garlic cloves, finely sliced

Directions
  • Step #1 Place the chicken on a plate.
  • Step #2 Lightly beat the egg white & mix in half the cornstarch.
  • Step #3 Pour over the chicken & toss together.
  • Step #4 Place the vegetable oil in a wok or large heavy skillet.
  • Step #5 Heat until hot.
  • Step #6 Add the garlic, ginger & cashews & fry until golden.
  • Step #7 Remove the nuts with a slotted spoon & drain.
  • Step #8 Mix the the chicken & stir fry for 2-3 mins, add the beans & sesame seeds & stir fry for 2 mins.
  • Step #9 Mix the remaining cornstarch with the lemon juice, sherry, sugar, soy sauce & chicken bouillon.
  • Step #10 Add to the wok & heat until thickened.
  • Step #11 Stir in the cashews.
  • Step #12 Stir in the scallions, cook for 30 seconds, then serve garnished with lemon & parsley.
