Mexican Hot And Sour Soup Recipe

Ingredients
  • 3 small corn tortillas, see note .
  • 2 c bread, dry torn up .
  • 14 1/2 oz hominy .
  • 2 medium carrots, coarsely sliced .
  • 1/3 c red wine, vingear .
  • 1 quart vegetable stock .
  • sliced fresh cilantro .
  • sliced fresh marjoram .
  • lime wedges .
  • 1 medium vine-ripe tomato, seeded sliced .
  • 1 lb fresh tomatillos, husked .
  • 1 small ripe avocado, cubed .
  • 1/2 lb green beans, 1/2 pieces .
  • 3 smoke dried jalapeno peppers or 1-2 tbsp chipotle chiles in adobo .
  • 1/3 c shredded muenster cheese .
  • 3 garlic cloves, peeled .
  • 1 tsp vegetable oil

Directions
  • Step #1 Toast the tortillas & cut into strips.
  • Step #2 If using chipotles make sure they are seeded & stemmed.
  • Step #3 Tear up the dried bread so it will fit easier into processor.
  • Step #4 Use canned hominy & drain it.
  • Step #5 The smoke dried jalapenos are Chipotles.
  • Step #6 I have NO clue why the zaar computer won't take it.
  • Step #7 In saute pan with oil, lightly toast the chilies over med heat until aromatic & slightly softened about 2 mins.
  • Step #8 In food processor/blender fitted with metal blade finely grind them.
  • Step #9 Add the bread, garlic & vinegar & puree to thick paste.
  • Step #10 In separate saucepan, cover tomatillos with water & let simmer until softened & tender about 8 mins.
  • Step #11 Drain & add to chili mix then puree until smooth.
  • Step #12 Transfer to saucepan & dilute with stock.
  • Step #13 Stir to mix.
  • Step #14 Add the hominy, tomatoes, green beans, & carrots.
  • Step #15 Simmer for 15 to 20 mins.
  • Step #16 To serve put a little of the cheese in each bowl, pour hot soup on top & garnish with the avocado, tortilla strips & herbs.
  • Step #17 Serve lime wedges on side.
