Chicken Piccata Recipe

Ingredients
  • 3 tbsps lemon juice .
  • 4 boneless skinless chicken breast halves .
  • 1/2 c all-purpose flour .
  • 2 tbsps sliced fresh parsley .
  • 3 tbsps olive oil .
  • salt & pepper .
  • 3/4 c chicken broth .
  • 1 tbsp capers, drained .
  • 3 tbsps butter

Directions
  • Step #1 Trim the fat from the breasts & remove the white tendons running through the tenderloins.
  • Step #2 Place each breast between sheets of wax paper & carefully lb with a meat mallet until less than 1/4 inch thick.
  • Step #3 Dust the chicken with the flour until well coated on all sides.
  • Step #4 Sprinkle top with salt & pepper.
  • Step #5 Heat the oil In a large-ish skillet over medium-high heat until very hot but not smoking.
  • Step #6 Use the tongs to add the chicken breasts in a single layer & saute for 3 to 4 mins on each side, until firm.
  • Step #7 Remove to a serving platter & cover with aluminum foil wrap to keep warm.
  • Step #8 Add the broth & lemon juice to the pan.
  • Step #9 Cook, stirring with a wooden spoon to loosen all of the browned bits stuck to the pan.
  • Step #10 Bring to a boil & cook this until the mixture is reduced to about 1/3 c, 3 to 4 mins.
  • Step #11 Stir in the parsley & capers.
  • Step #12 Spice up to taste withi salt an pepper.
  • Step #13 Remove from the heat & whisk in the butter, 1 T at a time.
  • Step #14 Pour the sauce over the chicken & serve as soon as possible.
