Gingered Chicken Stew (crock Pot) Recipe

Ingredients
  • 1 (20 oz) can unsweetened pineapple chunks, drained, juice reserved .
  • 2 tbsps cornstarch .
  • 1/8 tsp white pepper .
  • 1/2 tsp allspice .
  • 4 oz sliced water chestnuts (about 1/2 c) .
  • 1 c water or fat-free chicken broth .
  • 1 1/2 lbs boneless skinless chicken breasts, cut into 1 inch cubes .
  • 1 green bell pepper, cut into chunks (red or a mix of the two also work, but the green is a little less sweet & stands out more) .
  • 8 carrots, pared & cut into 1-inch pieces .
  • 3 tbsps fresh gingerroot

Directions
  • Step #1 In 3-5 quart crockpot, carrots, ginger, water (or broth), allspice, mix chicken, & pepper.
  • Step #2 Cover up crock pot & cook on low for 7-8 or high for 3-4 hrs until chicken is cooked.
  • Step #3 In small bowl, mix reserved pineapple juice & cornstarch & mix until smooth.
  • Step #4 Add to crockpot, stirring constantly.
  • Step #5 Add pineapple chunks, water chestnuts & bell pepper to crock pot.
  • Step #6 Cover up & cook on high for 20-25 mins until mixture is thickened.
