Chocolate Cream Cheese Cupcakes Recipe

Ingredients
  • 1 tsp salt, divided .
  • 1 (8 oz) package cream cheese, softened .
  • 1 tsp baking soda .
  • Frosting .
  • 1/3 c sliced pecans .
  • 1 tsp vanilla extract .
  • 1 1/2 c sugar, divided .
  • 1 c water .
  • 3 tbsps baking cocoa .
  • 6 tbsps milk .
  • 1 egg .
  • 1 c semi-sweet chocolate chips .
  • 3 3/4 c confectioners' sugar .
  • 1/2 c butter, melted .
  • 1/3 c vegetable oil .
  • 1/4 c baking cocoa .
  • 1 1/2 c flour .
  • 1 tbsp white vinegar

Directions
  • Step #1 For filling, in a small mixing bowl, beat cream cheese & 1/2 c sugar until smooth.
  • Step #2 Beat in egg & 1/2 t.
  • Step #3 salt until mixd.
  • Step #4 Fold in chocolate chips; set aside.
  • Step #5 In a bowl, baking soda, mix flour, cocoa, & remaining sugar & salt.
  • Step #6 In another bowl, whisk water, oil, & vinegar; stir in theto dry ingredients just until moistened.
  • Step #7 Fill paper lined muffin c half full with batter.
  • Step #8 Drop filling by heaping tbspfuls into the center of each.
  • Step #9 Bake at 350 for 24-26 mins or until a toothpick comes out clean.
  • Step #10 Cool for 10 mins before removing from pans to wire racks to cool completely.
  • Step #11 For frosting, mix confectioners' sugar, cocoa, In a large-ish mixing bowl, butter, milk & vanilla; beat until mixed.
  • Step #12 Frost ccakes; sprinkle with pecans.
  • Step #13 Store in the refrigerator.
