Roasted Garlic Mashed Cauliflower Recipe

Ingredients
  • 2 tsps hot sauce .
  • 1/2 tsp black pepper .
  • 1 tbsp margarine .
  • 1/4 c potato flakes (optional) .
  • 1/4 c 1% low-fat milk, as required .
  • 1/2 tsp salt .
  • 2 tbsps garlic, roasted .
  • 1 head cauliflower, cut into florets

Directions
  • Step #1 Roast garlic in 350 ovens for about 40 mins, covered with foil wrap.
  • Step #2 Bring large pot of water to a boil.
  • Step #3 Add a dash of salt.
  • Step #4 Boil cauliflower for about 7-10 mins or until completely cooked through but not mushy.
  • Step #5 Drain well.
  • Step #6 (You can steam the cauliflower if you prefer, I do).
  • Step #7 In food processor/blender or mixer, add drained cauliflower & remaining ingredients.
  • Step #8 Puree only until smooth adjusting consistancy with a bit of extra milk or potato flakes as needed.
  • Step #9 The potato flakes are optionaland give it just enough of that "potato" flavor to make it nice.
