Braised Leeks With Tomatoes Recipe

Ingredients
  • 2 garlic cloves, crushed .
  • 1/2 tsp dried chervil .
  • 1/8 tsp pepper .
  • 14 1/2 oz no-salt-added whole tomatoes, drained .
  • 1 tbsp cornstarch .
  • 1/2 tsp dried basil .
  • 3 c leeks, sliced (4 medium) .
  • 3/4 c low sodium chicken broth .
  • 1/4 tsp salt .
  • 1/4 c dry white wine

Directions
  • Step #1 Combine the first 7 ingredients in a 2-quart casserole; stir well.
  • Step #2 Cover up with casserole lid, & microwave at HIGH 6 mins, stirring after 3 mins.
  • Step #3 Combine wine & cornstarch in a bowl, stirring until mixed; add to leek mixture.
  • Step #4 Stir in tomatoes.
  • Step #5 Microwave, at HIGH 6 mins or until thickened & bubbly, uncovered, stirring after 3 mins.
  • Step #6 Yield: 5 servings (serving size: 1/2 c).
