Risi E Bisi With Ham And Parmesan Recipe

Ingredients
  • 1 3/4 tsps salt .
  • 1 onion, sliced .
  • 1 garlic clove, minced .
  • 1/4 lb deli ham, sliced .
  • 1/2 tsp black pepper .
  • 2 quarts chicken broth .
  • 6 tbsps butter .
  • 1 1/2 c rice, preferably arborio .
  • 2 tbsps fresh parsley, sliced .
  • 2 c frozen peas, thawed .
  • 1/2 c dry white wine .
  • 1 celery rib, sliced .
  • 3/4 c parmesan cheese, grated

Directions
  • Step #1 In a large pot, melt the butter over moderately low heat.
  • Step #2 Add the onion, until the vegetables start to soften, stirring every once in awhile, celery & garlic & cook, about 5 mins.
  • Step #3 Add the wine & boil until it almost evaporates, about 5 mins.
  • Step #4 Add the broth & bring to a boil.
  • Step #5 Boil until the liquid is reduce to approximately 7 c, about 20 mins.
  • Step #6 Add the rice, until the rice is just tender, stirring every once in awhile, parsley & salt & cook at a low boil, 10-15 mins.
  • Step #7 Stir in the peas, ham, Parmesan & pepper.
