Almonds, Mushrooms, Raisins And Red Pepper Pilaf Recipe

Ingredients
  • 1/2 c onions, sweet, finely sliced .
  • 1/2 tsp salt .
  • 3 tbsps butter .
  • 1/2 lb baby portabella mushrooms, sliced .
  • 2 c chicken broth, good quality .
  • 1/2 tsp fresh ground black pepper .
  • 1/4 c large golden raisins .
  • 2 green onions, finely sliced .
  • 1/2 red pepper, coarsely sliced .
  • 1 sprig fresh thyme .
  • 1/2 orange bell pepper, coarsely sliced .
  • 1/4 c almonds, sliced, toasted .
  • 1 c long grain rice

Directions
  • Step #1 Melt 1 tbsp butter in saucepan, add mushrooms & saute 3 mins over high heat, remove mushrooms & reserve.
  • Step #2 Melt remaining butter, in same pan, add onions & peppers, saute until soft.
  • Step #3 Stir in the salt, thyme, rice & broth.
  • Step #4 Bring mixture to a boil, cover, lower heat & let simmer for 20 - 25 mins, until all liquid is absorbed.
  • Step #5 Remove from heat, add in the reserved mushrooms, almond slices & raisins.
  • Step #6 Mix well, pour this into a nice dish, season this with freshly ground black pepper & garnish with finely sliced green onions.
