Delicious And Easy Mock Risotto Recipe

Ingredients
  • 2 tbsps extra-virgin olive oil
  • 2 (14 oz) cans chicken broth
  • 2 c uncooked orzo pasta
  • 1/2 small onion, finely sliced
  • 2 cloves garlic, minced
  • salt & pepper to taste

Directions
  • Step #1 Heat a saucepan over med-heat/flame.
  • Step #2 When it is not getting any hotter, pour in the olive oil.
  • Step #3 Add the garlic & onion; cook & stir until tender, about 3 mins.
  • Step #4 Pour in the chicken broth, & stir this to loosen any bits from the bottom of the pan.
  • Step #5 When the broth comes to a boil, stir in the the orzo pasta.
  • Step #6 Reduce heat to low, cover the pan, & let simmer for 15 mins, or until pasta has absorbed all of the liquid.
  • Step #7 Stir every once in awhile to prevent sticking, especially towards the end.
  • Step #8 Spice up with salt & pepper before serving.
