Scarlet's Lemon Crumb Muffins Recipe

Ingredients
  • 1 1/4 c flour .
  • 5 lemons, fresh .
  • 1/2 c sugar .
  • 3/4 tsp salt .
  • 1/3 c butter, softened .
  • 8 eggs .
  • 3 tbsps lemon juice .
  • 6 c pastry flour .
  • 2 c sour cream .
  • 2 c butter, melted .
  • 3/4 tsp baking soda .
  • 1/3 c lemon juice .
  • 3 3/4 c sugar .
  • 1 1/4 c sugar .
  • Streusel .
  • Glaze

Directions
  • Step #1 To make muffins: Sift flour, baking soda & salt together.
  • Step #2 Grate the rind of 5 lemons; set the juice aside.
  • Step #3 Whisk eggs; add sour cream, melted butter, & lemon juice; whisk until smooth.
  • Step #4 Fold in the lemon rind.
  • Step #5 Fold flour mixture & sugar into the egg mixture.
  • Step #6 Blend well.
  • Step #7 To make streusel:.
  • Step #8 Sift sugar & flour together.
  • Step #9 Add softened butter, work into dry ingredients until smooth; set aside.
  • Step #10 To make glaze: Stir sugar & lemon juice together until all the sugar is dissolved.
  • Step #11 Spray muffin tins.
  • Step #12 Fill with lemon muffin batter.
  • Step #13 Top each muffin with streusel.
  • Step #14 Bake at 350 degrees Fahrenheit for 18-20 mins.
  • Step #15 Poke muffins with a toothpick to make sure they are done.
  • Step #16 Drizzle top this with lemon glaze.
  • Step #17 Remove from muffin tin & store this in airtight container.
  • Step #18 Note: Batter can be kept in fridge for up to 1 week.
