Ingredients
1 1/4 c flour .
5 lemons, fresh .
1/2 c sugar .
3/4 tsp salt .
1/3 c butter, softened .
8 eggs .
3 tbsps lemon juice .
6 c pastry flour .
2 c sour cream .
2 c butter, melted .
3/4 tsp baking soda .
1/3 c lemon juice .
3 3/4 c sugar .
1 1/4 c sugar .

Directions
Step #1 To make muffins: Sift flour, baking soda & salt together.
Step #2 Grate the rind of 5 lemons; set the juice aside.
Step #3 Whisk eggs; add sour cream, melted butter, & lemon juice; whisk until smooth.
Step #4 Fold in the lemon rind.
Step #5 Fold flour mixture & sugar into the egg mixture.
Step #6 Blend well.
Step #7 To make streusel:.
Step #8 Sift sugar & flour together.
Step #9 Add softened butter, work into dry ingredients until smooth; set aside.
Step #10 To make glaze: Stir sugar & lemon juice together until all the sugar is dissolved.
Step #11 Spray muffin tins.
Step #12 Fill with lemon muffin batter.
Step #13 Top each muffin with streusel.
Step #14 Bake at 350 degrees Fahrenheit for 18-20 mins.
Step #15 Poke muffins with a toothpick to make sure they are done.
Step #16 Drizzle top this with lemon glaze.
Step #17 Remove from muffin tin & store this in airtight container.
Step #18 Note: Batter can be kept in fridge for up to 1 week.
