Broccoli Soup Recipe

Ingredients
  • Optional toppings .
  • 1 pinch dried thyme leaves .
  • shaved parmesan cheese (optional) or shredded cheddar cheese (optional) .
  • 4 c chicken broth .
  • 1 (16 oz) package frozen broccoli, thawed .
  • crumbled bacon (optional) .
  • 1/2 tsp kosher salt, plus more as needed .
  • 2-4 tbsps cream (optional) or half-and-half (optional) .
  • 1 medium onion, sliced .
  • 1 garlic clove, smashed .
  • 2 tbsps unsalted butter or olive oil .
  • 1 russet potato, peeled & sliced .
  • fresh ground black pepper

Directions
  • Step #1 Melt the butter in a medium saucepan, over med-heat/flame.
  • Step #2 Add the onion & garlic & cook this until translucent, about 5 mins.
  • Step #3 Add the potato, thyme, salt, & broth & bring to a boil.
  • Step #4 Adjust the heat to maintain a gentle simmer, & cook uncovered until the potato is fork tender, about 10 mins.
  • Step #5 Add the broccoli & let simmer for 3 mins.
  • Step #6 Puree the soup in batches in a mixer or with an immersion mixer.
  • Step #7 Return soup to the pot & add the cream.
  • Step #8 Bring to a simmer, taste, & season this with salt & pepper.
  • Step #9 Serve with optional toppings.
