Ingredients
  • 1/4 c red bell peppers, sliced .
  • 1 c vidalia onions, sliced (or any regional variety of sweet onion) .
  • 1 lb fresh corn kernels .
  • 1/2 c heavy cream .
  • 1/2 tsp salt .
  • 4 slices bacon, cut up into small pieces .
  • 1/4 c green bell peppers, sliced .
  • 1 tsp sugar .
  • 1 medium jalapeno, seeded & finely minced .
  • 1/4 tsp fresh ground black pepper

Directions
  • Step #1 Place the corn kernels in a bowl & pour the heavy cream over the corn.
  • Step #2 Allow to sit while you fry the bacon & vegetables.
  • Step #3 Cook the bacon over med-heat/flame until crisp.
  • Step #4 Add the onions, bell pepper & jalapeno.
  • Step #5 Cook until onion is translucent; about 4-5 mins.
  • Step #6 Now add the corn/heavy cream mixture to the pot, stirring until ingredients are mixed well.
  • Step #7 Stir in the salt, black pepper & sugar.
  • Step #8 Reduce heat to simmer & cook, covered for about 25-30 mins, stirring every once in awhile.
  • Step #9 Serve hot.
