Micro-steamed Hoisin Fish And Vegetables Recipe

Ingredients
  • cooked rice, for serving .
  • 1 c sliced shiitake mushrooms .
  • 1 tbsp peeled minced fresh ginger .
  • 1 tbsp reduced sodium soy sauce .
  • 3 tbsps hoisin sauce .
  • 1/2 c pre-shredded carrots (whoever invented these is a genius) .
  • 1 tbsp rice vinegar .
  • 1 (8 oz) package fresh sugar snap peas .
  • 4 scallions, both white & light green parts, thinly sliced (about 1/2 c) .
  • 1 lb salmon or grouper or other fish fillets, 1 1/2-inches thick (as stated above, I used tilapia, 3/4-inches thick)

Directions
  • Step #1 Cut the fish into 1-inch wide strips & place this in a 2-qt.
  • Step #2 microwave-safe dish.
  • Step #3 Scatter the sugar snap peas, ginger, mushrooms, carrots & scallions evenly over the fish.
  • Step #4 It's going to look really pretty so take a moment to admire it.
  • Step #5 Combine the hoisin sauce, soy sauce & vinegar in a small bowl & then slowly drizzle over the fish & vegetables.
  • Step #6 Cover up the dish with plastic wrap, folding back one corner to allow the steam to escape.
  • Step #7 Place the dish in the microwave & cook on high power until the fish is cooked through & the vegetables are crisp tender, 6 mins.
  • Step #8 Stop every 2 mins to carefully stir & reposition the fish so that the outside pieces are moved to the inside.
  • Step #9 ***I didn't really believe that the fish & veggies would be cooked in 6 mins but they WERE & they were perfect.
  • Step #10 I set the MWave for 2 mins & just carefully rearranged the fish each time (3 times).
  • Step #11 Serve the fish & veggies with the cooked rice.
