Spaghetti With Stuffed Meatballs Recipe

Ingredients
  • olive oil (for frying) .
  • 3 garlic cloves, minced .
  • 1 3/4 tsps kosher salt .
  • 1/2 tsp fresh ground pepper .
  • 1 lb ground pork .
  • 1 lb ground beef .
  • 1/3 c fresh flat leaf parsley, minced (plus more for garnish) .
  • 1/3 lb mozzarella cheese, cut into 1/2inch cubes .
  • grated parmigiano-reggiano cheese (for serving) .
  • 6 c tomato sauce (pick your favorite) .
  • 1 lb ground veal .
  • 1 c fresh breadcrumbs .
  • 2 lbs spaghetti, cooked & drained .
  • 1/3 c whole milk .
  • 3 eggs, lightly beaten

Directions
  • Step #1 In a large bowl, mix milk & bread crumbs.
  • Step #2 Add meats, garlic, eggs, 1/3 c parsley, salt & pepper.
  • Step #3 Mix briefly with hands, do not over work.
  • Step #4 Form into 2" balls.
  • Step #5 Seal a cheese cube into center of each ball.
  • Step #6 In a large skillet, over medium-high heat, heat 1/2" oil until almost smoking.
  • Step #7 Brown meatballs 1 min per side.
  • Step #8 Transfer to paper towel-lined tray.
  • Step #9 Discard oil in pan.
  • Step #10 Pour tomato sauce into pan; bring to simmer over medium-high heat.
  • Step #11 Add meatballs, cover & let simmer until cooked through, reduce heat to medium-low, 30 mins.
  • Step #12 Uncover; Cook 10 mins more.
  • Step #13 Serve over pasta with cheese, garnish with parsley.
