Oatmeal Chocolate Bar Cookies Recipe

Ingredients
  • 2 eggs .
  • 1 c flour .
  • 1 c packed brown sugar .
  • 1/2 c white sugar .
  • 1 tsp baking soda .
  • 1/2 tsp vanilla .
  • 3 c reqular oatmeal or quick oatmeal (not instant) .
  • 1/2 lb unsalted butter .
  • 1/4 tsp salt .
  • 10-14 oz dark chocolate, sliced coarsely

Directions
  • Step #1 Have ready, ungreased, two 9x9" square baking pans or one 15x10" jelly-roll pan.
  • Step #2 Preheat oven to 375 degrees.
  • Step #3 In a large glass or plastic mixing bowl, soften the butter (a few seconds in the microwave); it should be very soft but not completely melted.
  • Step #4 Using a heavy spoon, beat in both sugars, then beat in the eggs until smooth.
  • Step #5 Beat in the vanilla, baking soda & salt.
  • Step #6 Mix in the flour just until mixd, then stir in the the oatmeal & chocolate chunks.
  • Step #7 Spoon the cookie dough into ungreased baking pans.
  • Step #8 Using the back of the spoon, lightly spread the dough, leaving it a little higher at the sides & corners than in the middle.
  • Step #9 Bake on the middle rack of the oven for 17-20 mins, until set in the middle & brown around the edges.
  • Step #10 Because of the brown sugar, this cookie gets much darker than "golden brown" when it is done.
  • Step #11 Cool in the pan.
  • Step #12 Cut into bars to serve.
  • Step #13 Take some to work or school to give away, because the large amount of oatmeal makes them dry out in a few days if you have leftovers.
