Pineapple Phyllo Bundles Recipe

Ingredients
  • 1 (8 oz) can crushed pineapple, undrained .
  • 1 tbsp cornstarch .
  • 1 c butter, melted .
  • 2 tsps butter .
  • 1/2 tsp grated lemon rind .
  • 1 1/2 tsps lemon juice .
  • 3 tbsps sugar .
  • 16 sheets commercial frozen phylli pastry dough, thawed

Directions
  • Step #1 Drain pineapple, reserving 2 tbls.
  • Step #2 juice.
  • Step #3 Combine sugar & cornstarch in a small saucepan; stir well.
  • Step #4 Add reserved pineapple juice; cook over med-heat/flame, stirring constantly, until mixture boils.
  • Step #5 Boil 1 min, & remove this from heat.
  • Step #6 Add crushed pineapple, butter, lemon rind & lemon juice; stir until butter melts.
  • Step #7 Set aside.
  • Step #8 Place 1 sheet of phyllo on a damp towel (keep remaining phyllo covered).
  • Step #9 Lightly brush phyllo with melted butter.
  • Step #10 Top with another sheet of phyllo, & brush with butter.
  • Step #11 Spoon about one fourth of pineapple mixture in center of phyllo.
  • Step #12 Fold sides of phyllo over pineapple mixture, wrapping filling like a package.
  • Step #13 Wrap phyllo package in another sheet of buttered phyllo.
  • Step #14 Draw edges of phyllo up & over package, twisting & squeezing together in center.
  • Step #15 Pull ends up & out to resemble a flower.
  • Step #16 Place on lightly greased baking sheet; repeat with remaining phyllo & filling.
  • Step #17 Brush all bundles with melted butter.
  • Step #18 Bake at 375F for 15 mins or until golden brown.
  • Step #19 Serve warm.
