Cristobal's Baja Style Tuna Cakes Recipe

Ingredients
  • 1/2-1 tsp lime juice .
  • 1 (6 oz) can of quality tuna .
  • Sauce .
  • 2 tbsps butter .
  • 1 pickled jalapeno pepper, finely sliced .
  • 1/2 c of any salsa .
  • 1/2-3/4 tsp any hot sauce .
  • 1 tbsp mayonnaise .
  • 1 tbsp finely sliced walnuts (optional) .
  • 2-3 tbsps seafood cocktail sauce .
  • 2 slices of good quality bread (crumbled) .
  • Cakes .
  • 1 small garlic clove, sliced .
  • 2 pickled jalapeno peppers, sliced (optional) .
  • 1 tsp jalapeno juice, from jar (optional) .
  • 1 small fresh green onion, sliced .
  • 1 pinch cumin .
  • 2 eggs .
  • 1 (4 oz) can green chilies or 4 oz anaheim chilies .
  • 3 tbsps sliced fresh cilantro .
  • 1/2 tsp dried chives .
  • 1 tbsp mayonnaise .
  • 1 pinch salt & pepper

Directions
  • Step #1 Cakes:.
  • Step #2 mix all ingredients (except butter) in a bowl, consistency should be moldable when squeezed (hold shape) if otherwise add either more liquid or dry ingredients as necessary.
  • Step #3 Refridgerate for 1/2 to 1 hr.
  • Step #4 Pat & form into cakes Fry on a skillet or In a large-ish pan in 2 Tblsp.
  • Step #5 of Butter (more or less) set to medium low to medium heat.
  • Step #6 For my electric skillet this is 300F deg.
  • Step #7 F.
  • Step #8 Fry until golden, approximately 5 mins per side.
  • Step #9 Serve with sauce on top and/or to the side of the cakes while still warm or even when cold.
  • Step #10 Garnish can be a bit of lime & cilantro leaves.
