Black Bean Chicken Chili Recipe

Ingredients
  • 1 (8 oz) can tomato sauce .
  • 1 large chicken breast, cooked sliced or 2 small chicken breasts, cooked sliced .
  • 4 (16 oz) cans black beans, with liquid 500m .
  • 2 (16 oz) cans canned Mexican style stewed tomatoes .
  • 1 dash cayenne pepper .
  • 1 tbsp chili powder .
  • 4 tsps garlic, minced .
  • 4 tbsps butter .
  • 1 tsp salt .
  • 1/2 tsp crushed red pepper flakes .
  • 1 (6 oz) can tomato paste .
  • 1 tsp oregano .
  • 1 large onion, sliced .
  • 1 green pepper, sliced .
  • 1 red pepper, sliced .
  • 1/2 tsp cumin

Directions
  • Step #1 Melt butter In a large-ish Dutch oven over medium-high heat.
  • Step #2 Sauté onion, red & green peppers until tender.
  • Step #3 Add garlic & the remaining seasonings.
  • Step #4 Reduce heat & sauté an extra 1 to 2 mins.
  • Step #5 Add chicken to pepper mixture & sauté another 2 to 3 mins.
  • Step #6 Add beans, stewed tomatoes, & tomato sauce & tomato paste to the mixture.
  • Step #7 Bring to a low boil.
  • Step #8 Reduce heat & let simmer, uncovered, for about 30 mins or until chili thickens.
  • Step #9 Serve with cheese, sour cream, & jalapenos.
