Cinnamon Banana Breakfast Cakes Recipe

Ingredients
  • TOPPING .
  • 2 tbsps melted butter (for brushing on the cake tops) .
  • 1 c sugar .
  • 1 tsp cinnamon .
  • 1 tsp baking powder .
  • 2/3 c buttermilk .
  • MUFFINS .
  • bananas, for slicing .
  • 1 tsp vanilla extract .
  • 2 large eggs .
  • 1 c butter .
  • 1 1/2 c mashed ripe bananas (about three large) .
  • 2 tsps cinnamon .
  • 3 tbsps sugar (mixed with) .
  • 1 tsp baking soda .
  • 3 c all-purpose flour

Directions
  • Step #1 Preheat the oven to 350 degrees.
  • Step #2 Cream the butter & sugar together until light & fluffy.
  • Step #3 Add the eggs & continue beating.
  • Step #4 Add the bananas, vanilla, & buttermilk.
  • Step #5 In another bowl, baking soda, mix the flour, baking powder, & cinnamon together.
  • Step #6 Add the flour mixture to the butter-banana mixture & fold inches Spoon the batter into the muffin papers.
  • Step #7 Slice the bananas & arrange them on top of the dough.
  • Step #8 Use as many slices as desired.
  • Step #9 (Remember, the dough will expand in the oven while the banana slices will tend to become smaller.
  • Step #10 ) Brush the tops with the melted butter & then sprinkle them with the cinnamon-sugar mixture.
  • Step #11 Bake 20 to 25 mins or until a toothpick inserted in the center of the cake comes out clean.
  • Step #12 Cool on wire racks.
