Step #1 Pound out chicken breasts to about 1/4 inch thickness.
Step #2 Place flour in a shallow bowl, & mix in 1/2 of the salt & 1/2 of the pepper (reserving other half).
Step #3 Beat together the eggs, 1/2 of the lemon juice,garlic powder, the parsley, tarragon, the remaining half of the salt & pepper, & the grated parmesan.
Step #4 Heat olive oil & butter over medium-high heat In a large-ish skillet.
Step #5 Dredge each chicken breast through the flour, then dip in the egg mixture, letting excess drip back into the bowl.
Step #6 After dipping in the egg, redredge in the flour, & shake off excess.
Step #7 Place chicken in the skillet, & cook this until browned, about 3-4 mins per side.
Step #8 Pour remaining half of the lemon juice over the chicken, & let cook about 2-3 mins longer.
Step #9 Remove from skillet to a serving platter.
Step #10 Garnish with lemon slices & fresh parsley.
