Chicken Francese Recipe

Ingredients
  • 3 large eggs .
  • 1/3 c parmesan cheese (grated) .
  • 3 tbsps olive oil .
  • 4 boneless chicken breasts .
  • 1/2 tsp pepper .
  • 4 lemon slices (for garnish) .
  • 1/2 tbsp dried tarragon .
  • 1/4 c lemon juice .
  • 1 tsp salt .
  • 1/2 tsp garlic powder .
  • 1 tbsp butter (real butter is best) .
  • 4 sprigs fresh parsley (for garnish) .
  • 1/2 tbsp dried parsley .
  • 3/4 c all-purpose flour

Directions
  • Step #1 Pound out chicken breasts to about 1/4 inch thickness.
  • Step #2 Place flour in a shallow bowl, & mix in 1/2 of the salt & 1/2 of the pepper (reserving other half).
  • Step #3 Beat together the eggs, 1/2 of the lemon juice,garlic powder, the parsley, tarragon, the remaining half of the salt & pepper, & the grated parmesan.
  • Step #4 Heat olive oil & butter over medium-high heat In a large-ish skillet.
  • Step #5 Dredge each chicken breast through the flour, then dip in the egg mixture, letting excess drip back into the bowl.
  • Step #6 After dipping in the egg, redredge in the flour, & shake off excess.
  • Step #7 Place chicken in the skillet, & cook this until browned, about 3-4 mins per side.
  • Step #8 Pour remaining half of the lemon juice over the chicken, & let cook about 2-3 mins longer.
  • Step #9 Remove from skillet to a serving platter.
  • Step #10 Garnish with lemon slices & fresh parsley.
  • Step #11 Serve as soon as possible.
