Roasted Sweet Potato And Feta Ravioli Recipe

Ingredients
  • 3 tbsps reduced-fat feta cheese, crumbles .
  • 1 medium yellow onion, finely sliced .
  • 1 sweet potato, peeled, cut into 8 pieces .
  • 32 wonton skins .
  • 1/4 tsp pepper .
  • 2 tsps olive oil .
  • 1/4 c flour .
  • 1/4 tsp salt

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Toss sweet potatoes with 1 tsp oil, salt & pepper; place on a baking sheet & bake this until fork tender, about 1 hr.
  • Step #3 Meanwhile, heat remaining tsp of oil in a medium skillet over med-heat/flame; add onions.
  • Step #4 Cook, stirring every once in awhile, until softened & beginning to brown, about 5 mins.
  • Step #5 Set aside.
  • Step #6 Mash potatoes In a large-ish bowl, leaving mixture somewhat chunky; fold in onions & cheese until well mixd.
  • Step #7 Set aside.
  • Step #8 Lay 16 wonton skins side by side on a dry work surface.
  • Step #9 Spoon 1 tbsp of filling into the center of each of the 16 skins; lightly brush the edges with water.
  • Step #10 Top with remaining 16 skins; push out any air pockets.
  • Step #11 Press to seal.
  • Step #12 Transfer ravioli to a parchment covered baking pan dusted with flour; place this in the freezer until set, about 5 mins.
  • Step #13 Heat 2 quarts of water to a boil in a stockpot over medium-high heat; add ravioli.
  • Step #14 Cook until they float to the surface, about 2 mins.
  • Step #15 Drain; divide among four plates.
  • Step #16 Drizzle with sauce or sage butter.
